Our Favorite Veggie Recipe

From Juilette Tai - jtai@bedford.progress.com
Ingredients:
Directions:
This is really a fairly loose recipe. Here's the order in which I like to prepare it, as sometimes it might get pasty (due to the cereal).

Hard-boil the eggs (20 minutes or so should be safe for them) Start the rice at the same time. I generally, use the baby fruit juice and water to cook the rice.

In a food processor, shred the carrots and the sweet potato or yam.

Toast the wheat germ in the over - shouldn't take very long maybe 8 minutes.

Once the eggs are done, I use a fork to mash it up into small bits. I sometimes at this point put in about half the baby cereal and start getting this mixed in, as this is what causes the mixture to get pasty.

Oh, after I take the eggs out, rather than dump the water, I take the eggs out, and pop in the raisins for a minute or two to blanche.

When the rice is done (usually the rice is not fluffy, you'll have to experiment and get a consistency you like) but I keep it a little moist, it helps while I put in the other stuff. Anyway, I like to mix in the 2 jars of baby food into the rice, then I start mixing this up with the egg and baby cereal.

Start adding the rest of the baby cereal, and the toasted wheat germ, and start putting in the frozen veggies.

We actually find that when the veggies are still frozen, it's easier to work with because of all the stirring you don't make veggie-mush. At the end I stir in the blanched raisins.

During the holidays - we even stir in cranberries, or if you freeze them, we dump them in the mix while frozen.

Then take this mixture, and start putting it into the baking tray using aluminum foil (we fold it a couple of times thick) to separate rows. Cover it, then freeze.

Or as an alternative, use ice cube trays, though this amount would require quite a few ice cube trays.

The next day, take out the tray, thaw out enough so you can work with it, but not so much that it falls apart, and cut it up into blocks and put into a ziplock, and back to the freezer.

The next day, we microwave a block and add any fresh fruit, that's available, and sprinkle on the vitamins.

This amount usually lasts 6 weeks for a YNA, YCM, and budgie.

BTW: this is a bit of a time consuming project. My husband does a lot of this with me.

John Sielke's Veggie & Egg Mix

From John Sielke - jsielke@algorithms.com
Ingredients:
Directions:
This is mixed up in a bowl, then spread on a large plate, covered, and microwaved for 7-8 minutes (8 if using frozen veggies). The egg holds it together. Then I usually grate a LITTLE Monterey Jack Cheese on it, and serve to the guys (Above makes 9 servings, Macaws get 2 tablespoons each, smaller guys get 1 to 1 1/2 tablespoons.)

Stephe's Yeasty Waffles

From Stephe Blake - pbear@spieg.interealm.com
Ingredients:
Combine flour yeast (and salt) and set aside. Mix remaining ingredients in a saucepan, and heat until "wrist" warm. Add liquid to dry, and beat (I use a wire whisk) one minute. Allow to stand 15 to 20 minutes, for the yeast to get good and bubbly. Bake on a medium-high iron until golden.

With leftover batter, add some dry handfeeding formula, some dry (unsulfured, un-honey-dipped) fruit, like papaya or apricot, a hearty shake of a pungent spice like Star Anise or Alspice, and reduce the heat of the iron to low. Let them cook for a nice, long, time, until they're golden brown. They should be pretty hard by now, but break them into "quarters" (or whatever shape your waffle iron yeilds) and let them stand for an hour or so. Store in a cookie jar.

Enjoy.
EXTRA EASY MACAW MUFFINS

1 package Jiffy corn muffin mix
1 egg (washed, shell crushed fine if desired)
1/3 cup apple juice
1 apple, seeded and diced
1/3 cup frozen peas
1/3 cup frozen corn
1 Tablespoon pine nuts
1 Tablespoon candied orange peel, diced
1 Tablespoon crystallized ginger, diced

Mix all ingredients and bake according to package directions. Makes 12
muffins, not 6 as package states, because of all the goodies in there.
Leftover muffins freeze nicely. Our minimacaw will seize one of these
and stand over it growling! (I can't stand ginger, but the birds seem to
adore it!)
